Tim Mälzer

I arrived early in the morning from my flight landing, around 6am local time, and my next flight was to depart in five hours heading back to the United States. August 7, 2018, will be a day I will not soon forget. Not just for the nice German lunch with local beers I would have before continuing the next leg of the journey, but the threat that caused the police to shut down the airport and trap me in Frankfort.

The previous flight served breakfast so I was in no rush to eat. Having a five-plus hour layover I waited till about 10am to have an early lunch. Where I live in St. Petersburg, Florida and neighboring Tampa there are many good and average German restaurants to choose from. Some are a small family owned, while others large chain restaurants like Hofbräuhaus. Landing with a layover in Frankfort was a great chance to enjoy some true and authentic German cuisine once again since my last visit to Berlin was in 2012.

Hausmann's restaurant is a German Bistro and Brasserie at the Frankfurt Airport Terminal 1, serving traditional Tim Mälzer style or home-style cuisine for breakfast, lunch, and dinner in a comfortable and relaxing atmosphere that makes you forget you are in an airport. With an open kitchen, the bistro offers seasonal German cuisine while the brasserie serves dishes which include sustainably reared meats, to include Shawarma. The restaurant has two more locations in Dusseldorf all owned by business partners Tim Mälzer and Patrick Rüther (also Bullerei, in Hamburg), and Tim Plasse (also King Kamehameha Club, in Frankfurt). Tim Mälzer has become popular over television cooking shows and books in Germany. He writes Since 2009, his main concentration is running a restaurant called "Bullerei" in Hamburg, with his personal touch to design and menu with the Hausmann’s locations. Don't worry, I will tell you about the

While dining at Hausmann's in Frankfurt I ran across this sign, a great reason to be more green.

    • Suppen and Pasta

    • Süsses - Süßigkeiten (sweets)
The restaurant was near my gate so I knew that I could take my time and relax, then only have a five-minute walk to make the boarding on my next flight. The restaurant was divided into two sections with the bar in the center. As you look at facing to the back were large windows looking out to the Lufthansa planes at the gates. To the left was the Brasserie dining where I sat. It had a home comfort feel plus a nice local market feels with beers and wine on display, beef circling around the heat lamp of the Shawarma device. To the right of the bar was a quick style Bistro with more seating.

Hausmann’s has a large selection of German beer available from all ends of the spectrum whether it is top or bottom fermented. My first selection was a double IPA and Pale ale’s, in general, I have grown to enjoy thanks to some wonderful tasting microbreweries around Tampa and St. Petersburg in Florida. From special crafts, Belgian favorites, floral lager, and Helle beers, pale ale’s and IPA’s, wheat, porter, and finally stout beers. They also have a decent selection of local German wines from Pfalz, Rheinhessen, Rheingau, Baden, and Bavaria. The ‘Holy Shit Ale’ from Schoppe Bräu in Berlin by name alone needed to be consumed. 10% in volume, with a very high 100 IBU’s on the scale of 5 to 120, it is advertised as punk that lives in Berlin. With twenty-four selections to choose from at this brewery ‘Holy Shit Ale’ is a malt pilsner worth the order.

The name alone drew me to try it, the IPA was even better

I started the lunch with an appetizer selection of the Rindertatar, a beef tartar, lightly seasoned and served with sliced avocado, crème fraîche, crisps, and bread.  Other starter selections include a chopped salad, sausage salad, baked potato, and a healthy bowl. The second beer selection recommended by the staff was the ‘Drunken Sailor’ IPA from the Crew Republic Brewery from Unterschleißheim a small town in Bavaria. This beer was a little less hoppy and had less of a bitter note then the ‘Holy Shit Ale’ with 58 IBU’s and according to the Brewmaster’s notes is a classic IPA with exotic hop aromas, full-bodied and hop aromatic. A voyage of intense yet rounded aromas of tropical fruits and citrus pairing with Thai food, grilled steaks, and burgers.

The last beef tartar this good was at Mark Brandenburg in Berlin

I enjoyed this beer with the Worscht – Teller a special selection of sausages such as the Nürnberger bratwurst, the Kalbswurst veal sausage, and the Käsekrainer Cheese Kransky. The dish was served with sauerkraut, bacon, and homemade potato mash. All the sausages had a wonderful flavor and not as processed as American sausages. Taking the first bite brought me back to when I dined at Josty Bistro in Berlin by Chef Dumenika Bornhöfft having there Nuremberg Sausage and fried Thüringian sausages. Other dishes of interest was a rolled roast of pork belly and pork neck in a burger with apple-onion marmalade called ‘double the pig,’ and they also have filet of German beef, fish and chips, plus veal wiener schnitzel, and a section for entree soups and pasta.

Dessert:
The menu has three selections for sweets from the classical Apfelstrudel or Apple-strudel with vanilla ice-cream, a vanilla yoghurt with red fruit jelly and biscuits, and finally, my selection which was recommended over the Apfelstrudel which was going to be my original choice was the Tims Saftiger Schokoladenkuchen listed as a yummy chocolate cake with vanilla ice-cream. Every bite was better than the last, melting in your mouth which I am so glad the servers recommended to me. I enjoyed this with a cup of coffee.

Earlier in the article, I mentioned that August 7, 2018, will be a day I will not soon forget. As I finished the meal and walked back to my gate, a line began to form. The police and the Lufthansa attendants were telling people to wait. The line behind me grew larger, then as time went by you saw people who had boarded the planes being removed from them. We were then told to turn around and head back to the main terminal building. As the hundreds, if not a few thousand of us walked down the corridor, stores were closing and workers joined the crowds. When I got to the main terminal speaking with some police we were told to wait. The airport was on shutdown and no one had any idea when it would end so that not only I but thousands of others could get back to the planes. Everyone was told that by 1pm the airport would re-open. That time came and passed. I left the terminal and the airport trying to book a room at one of the hotels across the street with no luck as they were all booked.

A security threat at Frankfurt Airport on August 7, 2018 lead to a lockdown and evacuation
Frankfurt Airport / Terminal evacuation

Going back into the airport the terminal finally opened up again at 5pm and after waiting in a line for over an hour to get back to the gate, everyone learned that the flights we were on had taken off, and any connecting flights had also left. I was told to go to another line where Lufthansa would get everyone on new flights. Seven hours later after being in that line I was given a hotel room for the night and told to return in the morning. Luckily I managed to get out on a flight that would bounce me around Europe before getting back home to Florida.  From the different stories that I heard from police and Lufthansa the one that was the most plausible was that a family had gone through security even though when one of there hands had been swabbed turned out with a positive reading. When security caught back up with them there was some sort of confrontation and someone heard the word bomb. This led to the evacuation and shutdown of the terminal. Again, this may not be the official story, but it sounded real to me.

Final notes, review basics, observations, and more pictures:

Most reviews are subjective, depending on the writer; but they should also be responsible, and respectfully written, upholding the truth, and accurately conveying the experience to the best of the writer's knowledge, even if it includes metaphors the restaurant may not like to read about. My ratings are by the stars I award (from 0 to 5). The rating is calculated on a point accumulation of six separate factors based on individual experience. They include wine and other beverage selections, plate presentation, customer service, restaurant or café ambiance, food quality, and wow factor. To see more details of this rating list, read this article:
