In 2009, a Midwestern Italian boy decided to bring the recipes and traditions of his ancestors to the people of Colorado in a modern environment. When Pizza Republica opened in the Landmark Village, it was lauded by a clientele who appreciated its authenticity and traditional cuisine. By focusing on local and organic ingredients, Pizza Republica has become an Italian staple in Greenwood Village. They offer Authentic wood-fired Neapolitan Pizzas, house-made mozzarella, seafood, and pasta dishes. They have partnered with local and specialty purveyors and farms such as; Colorado hybrid Striped Bass from Alamosa, Sweet Escapes Pastry’s known for all Gluten Free products, Polidori Sausage, Papardelles Pasta, Haystack Mountain Goat Cheese, and other local organic producers and growers. They have a wine list featuring over 100 hand-selected Italian wines are just a few of the reasons Pizza Republica has been called, “The perfect spot for a romantic date out or to socialize with your friends.”

I first arrived here just south of Denver on a business trip and didn't feel like traveling far from the hotel, so I asked the concierge for a local place to eat lunch. When Pizza Republica was mentioned, the first thing that came to mind, of course, was a pizza! Seriously? I asked for a good place and you are recommending a pizza place? Well, let me tell you, it was an excellent recommendation. The dining room was very open and spacious, well decorated, great bar, and open kitchen. The pizza's are cooked old Napoli style in a wood-fired brick oven at 1000°f, with all fresh local and organic ingredients. I started with a glass of the 2010 Paitin Langhe Nebbiolo from D'Abla, Piedmonte, and according to the winemakers’ notes, it has a concentrated, complex, ripe red fruit, mint, vanilla, and sweet oak wood on the nose. To taste it is warm, soft, velvety, fresh, with sweet tannins, and very long persistence. For me it was very smooth but a little pale for my taste.
Since it was lunch, I had an appetizer and entree, beginning with the fried wild mushroom ravioli's, served with a balsamic reduction, mushroom demi-glace, shaved parmesan, and assorted herbs. For the entree course, they had sandwiches and large salads, but I'm in a pizza place, so I’m going to try their pizza that the concierge recommended. I chose their Georgio Pizza which had fennel sausage, made locally, with caramelized pearl onions, fried garlic, fresh mozzarella cheese, which I substituted for buffalo mozzarella and instead of a red sauce, I chose a garlic, oregano and olive oil sauce. The taste was very savory, heavy on the Mediterranean spice, and jumping from one flavor profile to another from the sausage to the roasted garlic. The pizza melted in my mouth with excellent texture, and a very crispy crust.
Since writing this article they have opened a second location in downtown Denver, and have received many more accolades, so I m glad they continue to do well, and if I’m in the area again, I will stop by for another wood-fired pizza.

I did not have dessert during this visit, but some items of interest on the menu include a chocolate Nutella ravioli, limoncello cheesecake, and a flourless chocolate torte
