Slyce Pizza Bar is a laid-back pizza bar known for their large menu selection of stone-baked artisan pizzas and music 7-day a week. The first location opened in Indian Rocks Beach, and from there to Madeira Beach, with a future spot in 2020 opening on St. Pete Beach. When choosing a pizza you also can decide between the signature crust, whole wheat, or a gluten-free pizza crust. Besides, appetizers, salads, and sandwiches, there are sixteen pizza selections to choose from that include a Chicago-Style deep dish reminding me of Gino’s East Pizzeria, plus a build your own pizza section, a calzone, and a Stromboli selection. One pizza on the menu is called the Sitton Supreme in honor of The Brodey Sitton Fund to recognize a local fallen hero SSG Mathew Sitton who died in Afghanistan in 2012. Over 4000 pizzas have been sold where $2.00 per pizza goes to the fund for the family. The pizza has applewood smoked bacon, pepperoni, cajun sausage, crimini mushrooms, fresh spinach, red onion, fontina, and fresh mozzarella cheese. 

For drinks, my wife started with a Calafuria Rosé from Tormaresca Estate Vineyard located in the heart of Apulia Masseria Maime near San Pietro Vernotico, ‘on the boot heel’ of Italy. She had the same wine a few weeks earlier when we dined at the Sea Salt restaurant in downtown St. Petersburg. According to the winemakers’ notes, the aroma is intense and delicate with fragrant notes of pomegranate, peach, and grapefruit along with floral notes, particularly violets. It is initially soft with a pleasurable crispness followed by delicately savory sensations and much balance with the aromatic persistence. The wine is made from Negroamaro grapes grown on the Masseria Maime estate in San Pietro Vernotico (province of Brindisi).

We started by sharing a salad called beets by Slyce with arugula rocket lettuce slivered almonds and a chèvre goat cheese. The beets were wedge sliced, dark ruby red, and a wonderfully gritty and sweet but rich earthy flavor which is a nice word for dirt, and that is not meant as an insult, that is what a good beet tastes like. The bitterness of the arugula lettuce is common especially if the leaves are left to mature too long before harvesting, with a nice peppery flavor, put together by the chèvre cheese which is very creamy and earthy as well with a slightly tangy flavor. The entire dish screamed earth and was a beautiful start to the meal.

We each had a personal pan or small pizza, and to try a variety from the sixteen selections offered, we each ordered our pizza as a ½ and ½  to try four of the sixteen recipes. My wife had the ½ truffle shuffle pizza with olive oil, garlic, mozzarella and a variety of gourmet mushrooms sautéed in truffle oil, with the ½ slyce special a pepperoni, green olives, and extra mozzarella cheese pizza. The truffle pizza was very tasty, earthy flavors, and nice spice profiles from the pepperoni.

For my pizza, I had the ½ sunburn with hot Italian soppressata salami, spiced cajun sausage, hot Italian sausage, pepper jack cheese, sliced jalapeños, green olives, fresh Serrano chilies, and green onions. With it upon request which I did do was a side of sriracha sauce. The second ½ was the here’s Johnny pizza with meatballs, sausage, roasted peppers, red onion and garlic topped with mozzarella cheese. The sunburn earned its name with pride with a complexity of flavors running from the bottom to the top of my palette that at times tasted the flavorful spice, followed by fire spice flavors.

We both shared each other's pizzas, and before even taking our first bites, looking at them as they were delivered, rustic, plus a light burn from the fired-oven, and the first whiff of aroma they melted in our mouths. From each bite, we confirmed that we had found a little piece of heaven and a great kept secret for the Tampa Bay that we will be visiting again and again.
