    Sea Salt, which is part of the Aielli Group of restaurants blends Florida style cuisine with the Mediterranean, 20-foot-tall wine tower, 80-foot long raw bar, private chef’s dining room and much more. It is a welcomed addition to The Sundial. My wife and I went for a second happy hour visit the first with friends, this time just the two of us. This is a hot spot and a great seafood restaurant for you to add to your St. Petersburg list of places to dine.

    Chef Aielli’s philosophy is to blend simplicity with the very best fresh ingredients in a menu that changes daily. Sea Salt uses products of the highest quality that are prepared and presented in a unique way while creating a warm, welcoming local environment that results in a truly memorable dining experience.

    For drinks, my wife started with a Calafuria Rosé from Tormaresca Estate Vineyard located in the heart of Apulia Masseria Maime near San Pietro Vernotico, ‘on the boot heel’ of Italy. According to the winemakers’ notes, the aroma is intense and delicate with fragrant notes of pomegranate, peach, and grapefruit along with floral notes, particularly violets. It is initially soft with a pleasurable crispness followed by delicately savory sensations and much balance with the aromatic persistence. The wine is made from Negroamaro grapes grown on the Masseria Maime estate in San Pietro Vernotico (province of Brindisi). I had a Freedive IPA from the Coppertail Brewing Company which is a pale golden colored beer, aromas of clean malt, heavy citrus and pine, though a hoppy taste, and a medium palate with a lingering bitterness.

    We began with some Louisiana Gulf Coast Oysters which have become very prized in the region since the numbers have been drastically reduced since the BP Deepwater Horizon oil spill in 2010, and the fact that Hurricane Michael knocked out the oyster capital of the world in Apalachicola 2018. My wife is not a big oyster fan so I enjoyed the plate. The oysters were large in size, deep cupped, and a liter clean grey color. It tasted like the ocean versus being brackish, a good sign. Smooth jelly-like texture and a sharp saltiness gives way to a subtle sweetness, still with a mild brine with a lite clean metallic taste. This was a very soft yet creamy oyster with a minor complexity of flavors.

    Next came an order of four truffled deviled eggs using free-range eggs filled with a creamy truffled-Dijon filling, garnished with red chili slices on a bed of arugula rocket lettuce leaf pieces. For a bar dish, the presentation was better than most bar dishes you see, and the filling greatly exceeded that of a normal deviled egg you would make at the house. The truffle flavor was very forward and hit the tongue seconds after the first bite and lingered all the way to the back palette, along with the spice from the Dijon. The other seasonings were lite and not overpowering to include the sodium. The flavors binned together for a nice finishing complexity to the egg dish and it melted in my mouth.

    The final dish was a locally caught grouper fish tacos topped with a jalapeño and red cabbage slaw mixed with shredded carrots, avocado pieces, diced tomato, and a garnish of sriracha aioli with ripped pieces of cilantro. The fish itself was lightly seasoned, but the first batch we got tasted old and tough plus a little dry. So a replacement dish was brought out that had a very juicy and tender texture that was much better than the first. The spices were light with salt and pepper, maybe some hint of blackening, and when mixed with the wonderful but lite and slightly spiced slaw, the flavors all came together with an explosion on the palate.

    Dessert:
    We did not have dessert during this visit, however, they had a few options that looked really good to include a milk chocolate dome with warm caramel sauce and Murray River salt from Australia. Others include a Crème Brûlée with dates and Kahlua, and assorted gelatos like a fernet Branca Menta gelato.
