The Canyon is a cafe and bar attached to the gift shop of the James Museum of Western & Wildlife Art in downtown St Petersburg and is part of the Datz Restaurant Group Concept. The James Museum opened in April 2018 and transports visitors through the rich and diverse heritage of the American West. With more than five hundred works of art dedicated to the wide-open frontier and the beauty of life in the wild. The museum co-founders Tom and Mary James have created a place for artists and living legends filled with tribal tradition and classical backdrop. My wife and I went on a date and discovered The Canyon and had a late lunch before touring this magnificent hidden gem of a museum.

My wife started with a glass of Gotham Sabine Rosè from the Coteaux a’Aix-en-Provence AOC which is a blending of 41% Grenache, 20% Syrah, 19% Cinsault, and 5% Rolle. According to the winemakers’ notes, the 2017 Sabine delivers the classic Provence Rosé profile with notes of raspberry, cherry, peach, herbal, citrus and mineral core. A creamy concentration from the small yields and concentrated fruit adds tremendous length on the palate. To ensure maximum complexity, there were over 30 small fermentations using dozens of different yeasts, creating a symphony of flavor. I stuck to my local favorite of the Cigar City Brewing Company Indian Pale Ale called Jai Alai.
A few days before our visit, we were listening to some music from an Austin, Texas station as they mentioned the annual hatch chili festival, and I mentioned how I had never tried one before. So when we saw the hatched chili burger on the menu, we went for it. The burger was made with a blend of brisket, short rib, and chuck with queso and a side of fresh potato fried wedges. The burger was filled with flavor, perfectly cooked, filled with juice, wonderful spice, and tender.
My wife ordered a wine to take with her as we toured the museum, but they did not allow beverages inside, so be warned on that when you dine at The Canyon to finish all beverages first. The museum was beyond words to describe. Fantastic only hits the surface of the collection. This is a true dedication and education to the American West, reflecting on history, culture, art, and understanding to a time long past, but never long forgotten.
Dessert:
We did not have dessert on this visit, however, some of their more interesting selections include a tres leches cake, Sarsaparilla Float, and a red rock donut bread pudding.

Other noteworthy Southwestern American articles and restaurants similar to The Canyon:
The cuisine of the Southwestern United States is food styled after the rustic cooking of the area. It comprises a fusion of recipes for things that might have been eaten by Spanish colonial settlers, cowboys, Native Americans, and Mexicans throughout the post-Columbian era; there is, however, a great diversity in this kind of cuisine throughout the Southwestern states of Texas, New Mexico, and Arizona. Southwestern cuisine is similar to Mexican cuisine but often involves larger cuts of meat.

Final notes, review basics, observations, and more pictures:
Most reviews are subjective, depending on the writer; but they should also be responsible, and respectfully written, upholding the truth, and accurately conveying the experience to the best of the writer's knowledge, even if it includes metaphors the restaurant may not like to read about. My ratings are by the stars I award (from 0 to 5). The rating is calculated on a point accumulation of six separate factors based on individual experience. They include wine and other beverage selections, plate presentation, customer service, restaurant or café ambiance, food quality, and wow factor. To see more details of this rating list, read this article:
Overall from this experience and the score factors outlined in the ‘about page’ section, based on my individual experience and rating, I give The Canyon a 4 out of 5 stars, meaning that they not only exceeded my expectations and were far above the average dining experience of most restaurants, but they just outstanding.
